Chef Steve's Savory Turkey Brine: A Recipe for Holiday Perfection

Chef Steve's Turkey Brine: Elevate your holiday feast with this secret recipe! A blend of aromatic herbs and spices that guarantees a moist and flavorful turkey. Get ready to impress your guests and elevate your Thanksgiving dinner to a whole new level.

Ingredients:

  • 2 cup of Fine Sea Salt

  • 2 cup of Brown Sugar

  • 3 T of Fresh Garlic Cloves, Crushed

  • 1/2 cup of Apple Juice Concentrate

  • 3-4 Sprigs of Fresh Thyme

  • 1-2 Sprigs of Fresh Rosemary

  • 2 T of Black Peppercorns

  • 8 liters of Cold Water

Method:

  1. Preheat oven to 325F

  2. Assemble and measure all ingredients.

  3. Dissolve sugar, salt and herbs in a small amount of hot water to let flavors meld together.

  4. Combine all ingredients in a large bucket and blend well. Place turkey into a large food safe container.

  5. Pour cold turkey brine over turkey to cover. Place lid on container and refrigerate overnight.

  6. Pat rinsed turkey dry with clean paper towels of clean kitchen towels.

  7. Place brined turkey in a parchment lined roasting pans and cover with plastic wrap and store in the fridge until ready to roast.

Cooking:

In this example, the turkey was 10-12 pounds, we cooked it for 2 3/4 to 3 hours. Roast to an internal temperature of 165 F. Cook it 1 hour before you need to cover and let it rest.
